Chocolate Peanut Butter Dream Pie.

After a long day of booking home inspections and talking to real estate agents, a nice slice of pie is what this mama needs.

I was trying to find a good low crab dessert that my whole family can enjoy and still be healthy to eat. I decided to try my own version of this delirious pie that is also gluten free and has very little sugar.

What you will need: Peanut Butte Cookie Bottom

  • 1 cup Peanut Butter
  • 1/2 cup Sugar
  • 1 egg

Cream Cheese Filling:

  • 1 Cup heavy Cream
  • 8 oz cream cheese
  • 1 teaspoon Vanilla

Chocolate filling:

  • 1 Cup heavy cream
  • 2 Tablespoons sugar
  • 1/4th cup coco powder
  • 1 teaspoon Vanilla

Whipped Topping:

  • 1 cup heavy creme
  • 1 teaspoon Vanilla

Recipe:

Start by preheating the oven to 350. Make the peanut butter cookie crust first. Mix the peanut butter, egg and sugar together. Place the batter into a baking dish and flatten out. Place dish into the oven and bake for 20-25 minutes or until the glossy look is gone. Wait for the cookie to cool completely before adding the filling. While waiting for the cookie to cool is a great time to make the filling.

In a stand mixer pour the cream and vanilla and mix on medium until the whipped cream starts to take form. Add the room temp cream cheese to the whipped cream and mix until combined and fluffy. Store in a bowl in the refrigerator until the cookie is cooled and start on the chocolate filling. again pour the cream and vanilla into the bowl and mix it on medium until the whipped cream is made. Add the sugar and coco powder mix until combined. place the chocolate filling into a bowl and put into the fridge. now for the topping. pour the cream and vanilla into the mixing bowl and whip until there are light peaks forming the topping should be less thick than the two filling creams.

When the cookie is cooled completely put the cream cheese filling evenly on the cookie top. Repeat with the chocolate and whipped cream. Chill in the freezer for 30 minutes or fridge for one hour.

Please note that this pie is not very sweet. The sweetest part is the cookie. If you are wanting a sweeter dessert add more sweetener to the cream mixtures. I only added 1 teaspoon of sugar to the chocolate so it was more of a dark chocolate taste. Have fun with the recipe. Thank you!

Taco Tuesday Dinner

We have a tradition in our house. Taco Tuesday! It has become so regular that if we have tacos on a Wednesday my son says “we can’t have tacos! It isn’t Tuesday!” So I decided to show you how we make tacos. Of course it isn’t a hard meal to make and you most likely make it the same as I but this Tuesday we tried something new, something BOLD!

We had never tried it before. It came with the seasoning and a sauce in the package so all I really needed was the ground beef! Easy peasy taco dinner. I usually use the soft corn tortillas and heat them in the oven. This was a nice treat.

I like onions in my tacos so I cut up an onion and put some olive oil in a pot to heat up and start sweating.

I browned the meat (drain off any excess grease) and added the sauce and the seasoning that came with the package of taco shells. Mmmm good enough to eat!

Tastes amazing! I always taste to make sure it is seasoned just right. Also a second taste to be sure! 😁 now time to get those shells in the oven to make them nice and crispy crunchy!

325 degrees for 5-8 min or whatever the package says.

Almost finished. I had some left over beans so I also made retried beans as a side. You make them by processing the beans in a food processor until smooth. Put some hot sauce in and BAM! Best beans ever!
